High fructose corn syrup (HFCS) is a kind of starch sugar crystal made by hydrolysis and isomerization of vegetable starch, which is an important sweetener. Production of high fructose corn syrup is not limited by region and season, the equipment is relatively simple, the investment cost is low. Because it's mostly fructose and glucose; Hence the name "high fructose corn syrup".
Colorless viscous liquid, good flow at room temperature, odorless. High fructose corn syrup is mainly composed of glucose and fructose. According to the fructose content, HFCS can be divided into three categories: the first generation HFCS (F42 type) contains 42% fructose; The second generation fruit high fructose syrup (TYPE F55) contains 55% fructose; Third generation fruit high fructose syrup (TYPE F90) contains 90% fructose. The sweetness of HFCS was positively correlated with the fructose content, and the sweetness of the third generation HFCS could be achieved by using a small amount in food
