Potassium Sorbate is often used as a preservative. It destroys many enzyme systems by combining with the sulfhydryl group of microbial enzyme system. Its toxicity is much lower than that of other preservatives. At present, it is widely used. Potassium sorbate can give full play to its anti-corrosion effect in acidic medium and has little anti-corrosion effect under neutral conditions.
Potassium sorbate is mainly used as food preservative. It is widely used because of its strong inhibition of mold and spoilage bacteria and easy dissolution in water. Potassium sorbate has been recommended by FAO as a safe and efficient food preservative. Potassium sorbate has the characteristics of low toxicity, good anti mildew effect, no change in the original properties of food, convenient use and wide application range.
