Ultrasonic extraction techniques can effectively disrupt plant cell walls and make it easier for solvents to penetrate into the cell interior, thereby speeding up the extraction process and increasing the extraction rate. For example, in the extraction of Agaricus bisporus proteins, the extraction rate of proteins can be significantly improved by optimizing parameters such as ultrasonic power, extraction temperature, time, and material-liquid ratio.14 In addition, ultrasound can be used to extract polysaccharides such as β-glucan from mushroom by-products, which have antioxidant and immunomodulatory properties.
