For example, in the extraction of Agaricus bisporus proteins, the extraction rate of proteins can be significantly improved by optimizing parameters such as ultrasonic power, extraction temperature, time, and material-liquid ratio.14 In addition, ultrasound can be used to extract polysaccharides such as β-glucan from mushroom by-products, which have antioxidant and immunomodulatory properties.
