Sodium hexametaphosphate, an inorganic compound with the chemical formula (NaPO3) 6, is a white crystalline powder that is easily soluble in water and insoluble in organic solvents. It is mainly used in the food industry as a quality improver, pH regulator, metal ion chelating agent, adhesive, and expander.
1. Mainly used in the food and industrial industries. The main applications in the food industry are:
(1) Sodium hexametaphosphate is used in meat products, fish sausages, hams, etc., to improve water retention, increase adhesion, and prevent fat oxidation;
(2) Used in soy sauce and soy sauce, it can prevent discoloration, increase viscosity, shorten fermentation period, and adjust taste;
(3) Used in fruit drinks and refreshing beverages, it can improve juice yield, increase viscosity, and inhibit vitamin C decomposition;
(4) When used in ice cream, it can improve swelling capacity, increase volume, enhance emulsification, prevent paste damage, and improve taste and color;
(5) For dairy products and beverages to prevent gel precipitation;
(6) Adding beer can clarify the liquor and prevent turbidity;
(7) Used in canned beans, fruits and vegetables, it can stabilize natural pigments and protect the color of food;
(8) Spraying sodium hexametaphosphate aqueous solution onto cured meat can improve its corrosion resistance.
2. The main aspects of the industrial industry are:
(1) Sodium hexametaphosphate can be heated with sodium fluoride to produce sodium monofluorophosphate, which is an important industrial raw material;
(2) Sodium hexametaphosphate as a water softener, if used in dyeing and finishing, plays a role in softening water;
(3) Sodium hexametaphosphate is also widely used as a scale inhibitor in water treatment industries such as EDI (resin electrodialysis), RO (reverse osmosis), and NF (nanofiltration).
