Fructose products appeared as an alternative to sucrose in the food field at first. Because the fructose products have incomparable performance advantages over sucrose, the fructose products gradually completely or partially replace sucrose in many fields of food processing. The purpose of this substitution is not only to solve the problem of sweetness, but also to improve the performance, flavor and taste of products. It has been proved by practice that fructose can replace 100% sucrose in fruit wine, medicinal wine, sparkling wine, medical syrup, fruit juice drink, jam, canned fruit, candied fruit, hard candy and hard bakery products. In ice cream, soft candy, soft baking products, it can partially replace with 10-50%. With the deepening of the understanding of fructose application characteristics, in the 1990s, many new products have been developed to expand the application of fructose in food. Until now, new applications of fructose in food are still being explored.* Fructose used in medicine is crystalline fructose, not high fructose syrup. Because the glucose content of HFCS severely interferes with the medicinal effects of fructose. For example, diabetics who take crystalline fructose have the glycemic index of only about 20, while those who take HFCS with F-55 have a glycemic index of 50-60, almost as high as those who take sucrose.
