Stevia is a new natural sweetener refined from the herbaceous plant stevia (or stevia leaf) , which has been used as an herb and sugar substitute in South for centuries. According to the international sweetener industry, Stevioside has been widely used in food, beverage and condiment production in Asia, North , South and European Union. China is the world's leading producer of stevioside. It is 250-450 times sweeter than sucrose and has a slightly astringent taste. Stevioside a has an obvious bitter taste and a certain degree of astringency and menthol taste, the pure product has less aftertaste and is the closest natural sweetener to granulated sugar. But when the concentration is high, there will be a smell [1] . Stevioside is stable in acid and salt solution, and stable at room temperature. Soluble in water, in the air will quickly moisture, solubility at room temperature more than 40% . Stevioside with citric acid or glycine, good taste; with sucrose, fructose and other sweeteners, taste better. It is a good natural sweetener for patients with diabetes and obesity because it is not absorbed and does not produce heat after eating.
